Foodie Friday: Gluten Free Cookie Butter Pretzel Bites

I think when we went gluten free (because my husband has Celiacs), finding treats and yummy munchies was the biggest challenge.

I was a baker--cookies, bars, bread and it took a while for me to come up with yummy alternatives. This concoction that I whipped up one day has become a family favorite.


GF Cookie Butter Pretzel Bites
Mix together well in a small bowl:
3/4 cup of your favorite nut butter--I usually use peanut or almond
6 TBSP softened butter
1/4 cup coconut flour
1/3 cup honey
1/4 tsp. sea salt
1 tsp vanilla
1/3 cup finely chopped dark chocolate chips

If you have the time, refrigerate the mixture for an hour or two.  If no time, assembly will be a bit more messy.

Using gluten free pretzels

sandwich a small teaspoon of the cookie butter between two pretzels.

Melt 1/2-3/4 cup dark chocolate chips and dip half of the pretzel bite in the melted chocolate. Let the chocolate harden--you can do this in the fridge.

Store in an airtight container in a cool place or in the fridge.  Yum!!
