Apple Time

After 6 years of patience, we finally have a nice crop of apples on our three little trees.  Coming from California where as a kid we had peach, apricot, plum, and apple trees, pomegranates, grapes, blackberries, and plentiful strawberries, I am always excited for anything that will actually grow in our extremely short Montana growing season.  I whipped up a gluten free apple crisp to celebrate our harvest.
I made up this recipe--it is quick and easy and yummy!

Gluten Free Apple Crisp
Peel and chop enough apples to fill a greased 9x13 pan.  Sprinkle and toss with some cinnamon and sugar (gluten free brands of course if you have to be gluten free).
Mix together:
1 C. gluten free oats
1 C. brown sugar
1 C. gluten free baking mix (I used Pamelas--by far the best we have found)
some shakes of cinnamon
Spread over the top of the apples.  Melt 3/4 C. butter and pour over the top.  Cover with foil and bake at 350 for about 45 min.  Uncover and bake another 15 minutes or until apples are tender and the top is crisp.  Serve with gluten free ice cream--mmm!

  2. Ooh, I am so excited. I've been gluten free for 5 6 weeks and I'm dreading those Thanksgiving apple pies. This may be on my menu :)

  3. I'm just north of you, in British Columbia not far from the border between BC and Montana. My apple tree was overloaded this year, the branches were almost on the ground! Thanks for the recipe, I'm sure I'll use it. :)
